Most Delicious Saffron Recipes

Saffron is the most expensive culinary ingredients in the world. Saffron harvesting is a labor-intensive process. Obtaining half of a kilogram of dry saffron requires 50000 to 75000 crocus flowers. Here is a delicious recipe for saffron rice pudding (also known as Shole Zard)

Saffron rice pudding is a sweet traditional dessert. It is very delicate and light in texture.


Jasmine Rice: 1 cup (crumbled rice is preferable)

Boiling water: 6 cups

Granulated sugar: 2 cups

Brewed saffron: 6 tablespoons

Rosewater: ¼ cup


Cover the rice with cold water in a large bowl. Pour off the water carefully and wash the rice for -4 to 5 times, until the water runs clear. Drain all the water using your hands. You can refrigerate it overnight and then crumble them with your hands or use crumble rice in the first place.

Combine the rice with 6 cups of boiled water and add them to a nonstick saucepan. Bring to a boil. Reduce the heat and simmer over moderately low heat. Stir it frequently until most of the water is cooked off and the rice is completely softened. (About 1 hour)

Add 2 cups of sugar, 2 cups of boiling water, ¼ cup of rosewater, and 6 tablespoons of brewed saffron to the rice. Increase the heat to medium-low for more than 5 minutes. Stir it frequently so the Shole Zard does not stick to the pan bottom. Continue stirring until the rice breaks down, 20 to 30 minutes. Pour the Shole Zard into suitable cups and let them cool at room temperature. Cover the cups tightly with a plastic wrap and refrigerate them for 1-2 hours. Garnish the pudding with slivered pistachios and almonds and cinnamon.
